You cannot get any nearer to proper Italian comfort food than this. The sliced aubergine is lightly fried in flour before layering with homemade tomato sauce, fresh basil, mozzarella and parmesan and baked in the oven. It is equally delicious eaten ‘alfresco’ on a warm summers evening or in winter when the curtains are drawn and you want something satisfying and filling.
Single serving is approx. 300-350gms
2 servings is approx. 600 -700gms

6 servings is approx. 1800 – 2100gms
