Courgette chilli chunks
This dish combines chunks of courgette slow cooked in olive oil, garlic, chilli and fresh parley with tomato.
The recipe is from Marcella Hazan and she suggests using it as a pasta sauce which goes very well with fusilli, spaghetti or penne. As well as a sauce for pasta it works really well as part of a selection of antipasti on bruschetta, as a warm side dish with grilled chicken or fish or it can be mixed into a plain risotto just before serving.
