Flourless upside-down plum cake
This flourless upside-down plum cake combines polenta, ground almonds and caster sugar with orange zest, vanilla extract and eggs all beaten together gently and poured into a tin on top off a layer of plums sprinkled with brown sugar. This cake has a lovely texture and a great taste.
It makes a great tea time treat or works equally well as a pudding served with cream, Greek yogurt or crème fraiche.
