Apple strudel is a classic northern Italian cake. It has it’s roots in Austrio-Hungarian cooking. The homemade pastry is rolled out and stretched by hand until it is as thin as can be and then covered with fresh breadcrumbs fried in butter until golden, chopped apple, walnuts, sugar, cinnamon and lemon zest. it is shaped into a traditional horseshoe shape. Brushed with melted butter and baked in the oven until golden brown.
By making our own pastry rather than the shop bought filo used in so many recipes we are confident that it is as close to ‘a crisp apple strudel’ (thank you Sound of Music) as you will get other than by going to Salzburg.
