Sicilian aubergine caponata
A typically Sicilian mix. Aubergines, red peppers, celery hearts and red onion are all individually sautéed in olive oil. When combined they are flavoured with capers, green olives, red wine vinegar, sugar, fresh lemon juice and flat leaf parsley to give a lovely sweet sour taste.
Caponata is really good as an antipasti dish or can be added to chunky pasta or couscous or as a warm side dish. A chunk of parmesan or pecorino, some really good bread and a serving of Caponata is a treat.
