Salsa Leggero – a homemade fat free tomato salsa
A light, fat free, tomato sauce made with lots of fresh vegetables. We use onion, garlic, carrot, celery and fresh herbs. The vegetables are simmered with the tomatoes until cooked then sieved together.
Serve the sauce with a fine spaghetti or any number of pasta dishes such as tortellini. Add fresh flat leaf parsley or basil and freshly grated parmesan just before serving.
This sauce can also form the base for many other dishes. It can be used as the basis for a traditional Bolognese simply by browning some lean mince in a frying pan, adding the sauce and leaving to simmer for a good long while – topping up with water as necessary. You know that you are getting all the goodness of fresh vegetables without the preparation but with all the taste.

Salsa Legero can be bought either fresh or frozen. If bought fresh it is to be kept refrigerated for up to 3 days.
