Italian lemon meringue pie
Surely every one loves lemon meringue pie ? This is a twist on the classic English dish. This delicious dessert is made with homemade lemon curd using fresh lemons and free range eggs (from our own chickens) on a homemade sweet pastry base. The twist is with the Italian meringue which is soft and sweet and contrast well with the deliciously tart lemon curd and crumbly sweet pastry.
It is served cold and the beauty of the Italian meringue is that it keeps it’s shape (rather than going a bit runny like it’s more traditional cousin).
You could go for it and serves an ice cold Limoncello alongside for a real treat.
One large size tart is 20cm.
Ingredients: Plain flour (wheat), caster sugar, salt, butter (milk), free range eggs, fresh lemons; digestive biscuits (flour/dried skimmed milk), glucose syrup
