There are many variations to this sauces origins but, certainly the most interesting one is that this spicy sauce came from the streets of Naples and was a quick dish made of ingredients which were readily available for ladies who led very busy lives !
A spicy Neapolitan tomato sauce with a subtle taste of anchovy, garlic, olives, capers and oregano. Serve with flatter type spaghetti or penne lisce. Add flat leaf parsley or basil before serving. Grate fresh parmesan over the dish.
This sauce can also form the base for other dishes. It goes really well with spicy sausages and polenta or put it in a ramekin with prawns and top with feta and bake for a few minutes until cooked through then sprinkle fresh lemon and parsley, serve with warm ciabatta bread.
