Spinach, tomato & ricotta lasagna
Spinach, tomato & ricotta lasagna is a traditional vegetarian alternative to the meat based lasagna. Sheets of lasagna are layered with a homemade tomato sauce, buttered, steamed spinach seasoned with nutmeg and a homemade béchamel sauce enriched with ricotta and finished with freshly grated parmesan cheese. The dish is then baked in the oven until golden brown and bubbling hot.
Serve with a fresh green salad and crusty bread.
