Italian summer vegetable lasagna
This is a very different type of lasagne. It is made using homemade pancakes rather than sheets of lasagne – so maybe it shouldn’t be called a lasagne at all – never mind.
Thin pancakes are layered with peas, asparagus tips and sautéd, diced courgettes and a very delicate sauce made from ricotta cheese, single cream and parmesan.
So if you want to try something out of the ordinary – look no further.
Instructions are given for re-heating.
Small serving is for 2 people
Medium serving is for 4 people
Large serving is for 6 people
Ingredients: Plain flour (wheat), free range eggs, milk, salt; fresh asparagus, fresh courgettes, fresh (or frozen) peas, extra virgin olive oil, ricotta cheese (milk), single cream (milk),fresh parmesan (milk)
