This sauce is a delicious combination of chestnut mushrooms sautéed in olive oil, butter and garlic. Seasoned with salt and pepper and simmered with white wine. When the wine has reduced double cream and fresh grated parmesan added and simmered to give a lovely, unctuous sauce,
