Ragu with shin beef
For me Italian cooking is at it’s best when it goes back to the simple and traditional recipes. This beef ragu using top quality braising or shin beef is a perfect example.
Ragù is the perfect example of Bolognese cooking which has a richness of flavour. This ragu follows the traditional Bolognese recipe but with less butter and olive oil so it is slightly lighter to eat.
This ragu is perfect with egg tagliatelle and a sprinkling of fresh parmesan.
Ingredients: Shin/braising beef, butter, extra virgin olive oil, pancetta, onion, carrot, celery, garlic, bay leaf, concentrated tomato paste, red wine, grated nutmeg, salt and freshly ground pepper, meat stock, milk
